-1 cup sugar

-2 tablespoons all-purpose flour

-1/2 teaspoon salt

-3 large eggs, lightly beaten

-1/2 cup milk

-1/2 cup vegetable oil

-3 large plantains (1 1/2 to 2 pounds), peeled and sliced into 1-inch pieces

-1 cup raisins

-1/2 cup currants

-1/4 cup brandy


1. Preheat oven to 375 degrees.

2. In a small bowl, combine sugar, flour and salt.

3. In another bowl, combine eggs, milk and oil.

4. Pour the egg mixture into the flour mixture, and mix well.
